Thooyamalli” literally means pure jasmine. Since the rice of the variety is white in colour like jasmine, it is known by this name. The rice panicle blooms whitish whereas the rice is goldish colour, also the cooked rice is white in colour like the jasmine flower.In the flowering stage, the ear heads look like flowers. The nature of flowering is considered to be the reason for the term ‘Pure jasmine rice’. The quality characteristics of traditional organic tndian rice, Thooyamalli, is a short bold grain. It was observed that this rice variety has good cooking and milling characteristics. The analysis of milling characteristicsindicate that the parboiled rice has better quality characteristics such as head rice yield and shelling breakage. This non-aromatic rice variety had satisfactory cooking qualities with normal taste characteristics. The gel consistency evaluated indicated that the rice would maintain good grain integrity on cooking.
